Preparation of Bengali Fish Curry

Fish curry is the soul food of every Bengali who is devoted to eating fish. Here is a simple recipe of a famous fish dish.

Ingredients:

  • 500 grams of fish fillets (Rohu or Catla)
  • 1/2 teaspoon chili powder
  • 2 tomatoes
  • 1 teaspoon of powdered mustard seeds, minced ginger, garlic
  • 2 green chilies
  • 4 tablespoon mustard oil
  • 1 cup of water
  • 2 chopped onion
  • Salt and sugar
  • 1/2 teaspoon powdered turmeric

How to make Bengali fish curry or Machher Jhol:

To prepare it, at first marinate the fish fillets by adding salt and turmeric powder in a bowl. Then make a smooth paste by grinding the chopped onions, ginger, garlic, and green chilies. After that, put mustard oil in a pan and then fry the marinated fish fillets until they turn golden brown. In a separate pan, heat some oil and put mustard seeds. Now, add the prepared paste, chopped tomatoes, chili powder into that. Finally, add water and stir. When the gravy gets its color, add salt according to your taste. At the final stage, add the fried fish in the gravy. Lid the pan and let it cook for up to 7-8 minutes. It will make the fish juicier. And you are done.

Preparation of Kosha Mangsho

Kosha Mangsho is an iconic delicacy dish of Bengalis. Here is the quick recipe of kosha mangsho to be served for 4 persons.

Ingredients:

  • 750 grams mutton
  • 3 pieces of medium halved potatoes, medium onions, green chilies, bay leaves
  • 1 teaspoon garam masala powder
  • 2 teaspoon Meat masala
  • 8 cloves garlic
  • 2 teaspoon of powdered turmeric, ginger garlic paste, powdered red peppers, coriander powder
  • Sugar and salt- according to taste
  • 4 tablespoon yogurt
  • 12 whole black peppers
  • 4 green cardamoms
  • 5 cloves
  • 1/2 inch cinnamon sticks
  • 3/4 cup mustard oil

How to make Kosha Mangsho:

First of all make a paste of garlic, ginger, and onions. After washing and cleaning the mutton, add the paste to it and marinate. Mix the yogurt, turmeric powder, coriander powder, red pepper powder, salt, and some mustard oil. After mixing these well leave it for 2 to 3 hours. Next, pour some mustard oil in a wok and heat it. Fry the potatoes until it becomes golden keep them aside. Now, put some oil in the wok, add green chilies, some salt, and turmeric powder according to taste and temper (kosha mangsho recipe) it with the black pepper, cinnamon stick, bay leaves, cloves, and cardamom. When the aroma of spices comes out add sugar for caramelized color. Then pour the marinated mutton in it and cook it for about half an hour. Until the pieces of mutton become tender keep adding water and continue the cooking. When it is almost ready, add the fried potatoes, garam masala, and meat masala and stir well. And it is ready to serve.
